Chicken and Noodles with Peanut Sauce
5 ounces uncooked japanese curly noodles (chucka soba). I use top ramen but any asian noodle will work.
1/2 cup chicken broth
1/3 cup hoisin sauce
1/4 cup creamy peanut butter (chuncky will do)
2 tbl rice vinegar
2 tbl ketchup
1/4 teaspoon crushed red pepper (I omit this so it won’t be spicy)
2 teaspoons dark sesame oil, divided
1 pound chicken breast tenders or whole breast cut up
1 1/2 cup red bell peppers
1 tbl bottled ground fresh ginger
1 teaspoon minced garlic fresh or bottled
1/2 cuo green onions, divided
1. Cook noodles according to package, drain.
2. Combine broth and next 5 ingredients in a bowl, stir well with wisk. Set aside.
3. Heat 1 teaspoon sesame oil in a large nonstick skillet over medium heat. Add chicken, saute 4 minutes. Add bell pepper, saute 3 minutes. Remove from heat. Combine chicken with noodles.

4. Heat remaining 1 teaspoon sesame oil over medium heat. Add ginger and garlic, cook 15 seconds. Add broth mixture and cook 30 seconds stirring constantly.
5. Add broth mixture and 1/4 cup green onions to noodle/chicken mixture. Toss well. Sprinkle with remaining onions.
I like to serve pot stickers and steamed broccoli with this.
